Monday Munchies

Happy Tuesday all!

So, I am about to do something extremely out of the ordinary for the blog. I am about to tell you what I ate yesterday…I know, I’m wild, right? When I do my daily bit of food blog stalking, there are a few food blogs that I follow where the blogger talks about their daily eats, all day, every day. So, of course I had to see what this was all about and try it out myself. I would begin with showing you what I ate for breakfast, however; I got this “brilliant” idea to document my Monday Munchies in the middle of my lunch. So, I will just have you know that my breakfast was uneventful, a bowl of leftover fruit salad from my family football party, made of watermelon, pineapple, and strawberries. I added some vanilla yogurt and a glass of unsweetened Vanilla Almond Breeze Almond Milk with cinnamon and Truvia. I know, so eventful! You should be jealous. Now, be aware, because the photos that I am about to show you were taken from my Blackberry, which isn’t exactly a smart phone, regardless of what T-Mobile may tell you about it’s features. Here goes nothing!

For my mid-morning snack I had my fave Larabar: Coconut Cream Pie. I had the mini-size that I got from the runner’s expo on Sunday. They were passing out samples, so of course I was the greedy sampler and had to sample about 6 of them…you know, one for me, for my sister, my mom, and my uncle’s daughter’s cousin from another mother.
 Then I ventured to Whole Foods for lunch (go figure), where I made myself a huge salad beast. 
Field of greens, bock choy, sliced mushrooms, yellow beet chips, grapes, mandarin oranges, and a hard-boiled egg. 
 I also had a side of the Cilantro Pesto Tofu. Yes, I said it, TOFU. No, I am not a vegetarian or a vegan, but if something tastes so delicious, I could care a less what it is…I’m eating it. Let me tell you, this stuff is absolutely addictive and you know how I feel about pesto. This tofu is like the almighty steak for veggie people. However, I would probably prefer a piece of steak over this tofu, medium-rare please!
For the most part of the day I was studying for my personal training cert., which required some extra brain fuel. For a snack I had a bottle of my fave Mango Coconut Kevita…I took a picture but my camera flash wouldn’t cooperate on my phone. It was absolutely heinous, creating a huge glare from the glass bottle. Not gonna happen. No thanks. 
Anyway, last night I made my parents a nice dinner for their post-run date. I know, I know. Daughter of the year! They didn’t get home til around 8, so I enjoyed a nice lonesome dinner with The Bachelor on t.v….gotta say, this season is not my fave!
Herb-Dijon Baked Chicken, Tzatziki Sauce, Baba Ganoush, Roasted Kabocha Squash
 Kale Salad with Low-Fat Raspberry Dressing
 And for dessert, Greek God’s yogurt, frozen, with raspberries and kiwi. 
Well, I hope y’all enjoyed my first segment of what Chelsy ate. Maybe I will start doing these randomly. This brings me to ask? What would y’all like to see more of on Mangia? I would LOVE to know your thoughts…anything goes. I will make it happen. Also, feel free to leave a comment letting me know what you eat on a daily basis. It could be anything from foie gras to pop-tarts…I am all ears.
