Walnut Crunch Cake

Sometimes we just need a piece of cake.

With a slice of life.

Or is it the other way around?


I truly believe that God puts people and experiences in our lives for a reason.

If he didn’t, I’m not sure I would have ever learned anything about life.

This past weekend I really got to enjoy some quality time with my dad.

We are super close, but my mom was out of town so we found some daddy-daughter things to do.

We basically did stuff I used to do with him as a child, but added some more grown up things in there, like making fresh peach margaritas and stuffing our faces with homemade guacamole and chips.

We also went to the HSPCA to look at cute puppies and ate at my favorite barbecue place where I watched my dad happily down his favorite Chicken Fried Steak of all time.

It’s simple things in life that truly make me happy and as I grow older, I feel as though I am truly becoming wiser.

Time is short.

Spend them with the ones you love.

Also, eat lots of cake.


This is basically a cake I dreamt up in my sleep.


It’s a tasty little date-sweetened cake with a crunchy cinnamon walnut topping.


It’s a total dream cake.

Walnut Crunch Cake
Recipe type: Cake, Dessert

A melt in your mouth cake sweetened with pureed dates and topped with a combo of cinnamon and crunchy walnuts. Gluten-free, paleo, refined-sugar free.
  • For the cake:
  • 15 Medjool dates, pitted and soaked in warm water over night, drained
  • 2 large eggs, at room temperature
  • ¼ c. full-fat coconut milk (chilled over night)
  • 2 T. walnut butter
  • 1 t. pure vanilla extract
  • ½ c. coconut flour
  • ½ t. baking soda
  • ¼ t. salt
  • For the topping:
  • ½ c. finely chopped raw walnuts
  • 1 T. walnut butter (if you don't have walnut butter, just use coconut butter)
  • 1 T. coconut butter, slightly melted
  • 2 T. Truvia sweetener
  • ½ t. ground cinnamon
  1. For the cake, preheat the oven to 350 degrees F. Grease a square baking pan with cooking spray.
  2. Place the dates in a large food processor and process on high until smooth.
  3. Place the dates in a large mixing bowl.
  4. Add in the eggs, coconut milk, walnut butter, and vanilla until smooth.
  5. Stir in the coconut flour, baking soda, and salt.
  6. Pour the batter into the prepared pan.
  7. For the topping, combine all ingredients in a small bowl until a crumbly topping forms.
  8. Spread the topping evenly over the batter.
  9. Bake for 35-40 minutes or until lightly golden brown.
  10. Let cool slightly, cut into squares and serve topped with extra coconut butter if desired.

Let’s talk about working out.

Oh, and I’m not talking about beating cake batter with a spatula.

I wish that counted.

As a personal trainer and someone who is completely enamored by the fitness world, I make exercise a daily part of my routine.

In fact, I cannot start my day without a good workout.

I usually run outside about 4 days a week.

However, on my “off” days I like to switch it up.

I don’t really have a necessity for a gym membership so my home is transformed into my own little work out space.

Plus, if you live in 99% humidity during the summer like I do, you need a break from the heat.

This past year I have upped my home workout game.

Not only is it convenient, but I love that I can workout, shower, and have my morning cup of coffee all under an hour.

Plus, it saves me some gas money driving to a gym location.

With that said, here are my top 5 favorite workout sites that allow you to workout in your living room.

#1. Tone It Up:


I can’t even begin to explain the success I have had with the Tone It Up program.  Tone It Up was started by Karena and Katrina, two real life best friends, personal trainers, business partners, and all around amazing fitness role models. What drew me to the Tone It Up program is these ladies themselves. Their approach to fitness is fun, fresh, energetic, bubbly, spirited, and all about empowering women to believe in themselves and get fit. Plus, their “look and feel like a beach babe” method actually will have you doing just that! The best thing about the Tone It Up program is that it is free to become apart of the Tone It Up community. My favorite part is the array of free fitness workouts that you can access at the drop of a hat. They have everything from yoga, to abs and arm routines, and total body workouts. My favorite workout to do is any of their High Intensity Interval Training and Cardio routines. They give me that high intensity workout that I need in a short amount of time. Check out their Hitty Bitty Bikini workout to get that energetic workout you need to make your day amazing! Feel free to check out the Tone It Up  fitness dvd’s if you want to make a greater commitment to this program after trying it out. Their dvd’s are amazing! No joke.

#2. Body Rock TV:


Seriously…get ready to have your body rocked. Body Rock TV is an online fitness community dedicated to the health and wellness of it’s members. What what? Workouts are free online! Oh, plus, they offer HIIT Max, body rock, and yoga videos of your choosing. My favorite

#3. Barre 3 online workouts:


If you have ever done ballet or danced at all in your life, Barre workouts are built on this basis. HOWEVER, and that is a big however, you won’t be doing plies and jete’s all day. Nope. You will be feeling the burn as your muscles are worked with the tiniest movements, that produce maximum results. Ummmmmmmm, can you say plethora of free and effective workouts? Try out my favorite 10 minute Crossfit workout that left my butt kicked and wanting more!

#5. YouTube:


When I say YouTube has possibly all of the fitness videos that you could imagine and more…they do. I love to mix different workouts together. I usually head over to Jillian Michael’s  page for one of her “shred” workouts and then cool off with a light routine from Cassey at Blogilates or something from Gina at the Fitnessista. It’s all free so just search fitness routines to your hearts content. You can’t go wrong!

Lemon Olive Oil Chocolate Banana Bread


It’s time for another Secret Recipe Club reveal.

I really feel like a veteran in this club.

I mean, I’ve been doing these reveals since they started.

When was it 3 years ago?

I feel like time has passed so quickly!

This month’s recipe comes from Sashi, the lovely gal behind the blog Get Off the Couch and Cook.

Catchy blog name huh? I know, I love it. It’s just so straight forward.

What I really loved about Sashi’s story is learning that she was diagnosed with an intolerance to processed foods.

I had no idea that even existed, but in our world today…I totally believe it.

Anyway, Sashi has to learn how to reconstruct her diet so that she could live a normal nutritional life.

Oh, and she did just that. Plus, she lost over 65 pounds doing it.

Sashi’s motto is to share easy recipes made with real food for real people, and she rocks it out.

You know my stomach wanted something sweet.

Sashi’s Lemon Olive Oil Chocolate Banana Bread is where it’s at.

I mean, I’ve never met a lemon/olive oil combo I didn’t like.

They just pair beautifully together.

Lemon Olive Oil Chocolate Banana Bread

A melt in your mouth banana bread made with olive oil and lemon zest for a delicious twist. Not to mention, I topped it with a simple lemon glaze. Gluten-free, paleo, nut-free.
  • For the bread:
  • 2 large, very ripe bananas, mashed
  • ¼ c. unsweetened apple sauce
  • ¼ c. extra-virgin olive oil
  • 2 T. unsweetened coconut milk
  • 2 large eggs
  • ½ c. granulated stevia
  • 1 t. pure vanilla extract
  • ½ c. coconut flour
  • ½ t. baking soda
  • zest of 1 lemon
  • 1 c. dark chocolate, chopped
  • For the glaze:
  • ½ cup full-fat coconut milk, refrigerated overnight, brought to room temperature
  • juice of 1 lemon
  • 2 T. granulated stevia
  1. Preheat the oven to 350 degrees F. Grease a loaf pan or 8x8 in. square baking dish with cooking spray.
  2. In a large mixing bowl, combine the bananas, apple sauce, olive oil, coconut milk, eggs, stevia, and vanilla until smooth.
  3. Stir in the coconut flour, baking soda, and lemon zest.
  4. Fold in the chocolate.
  5. Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  6. For the glaze, combine all ingredients in a small mixing bowl until a semi-thin glaze occurs.
  7. Let the bread cool completely, cut into squares and serve drizzled with the glaze.


Sesame King Tahini Review and Giveaway

Let’s talk about one of my all time favorite ingredients to use in the kitchen.

When I was little, I probably would have said that my favorite “ingredient” was pop-tarts or any kind of sugary cereal.

Boy, have I come a long way.

I use this ingredient practically every day.

It’s tahini, otherwise known as sesame seeds that are pulverized to form a creamy, smooth, seed butter.

It’s used a ton in Middle Eastern cooking.

I use it to make hummus, salad dressings, and as a little sauce for my vegetables.

It can also be used to make baba ghanoush and halvah.

So, when I was contacted by Sesame King to sample some of their tahini flavors…I was floooored!

Seasame King Tahini is made from only the purest, natural, sesame seeds.

It’s also gluten-free and Non-GMO!

It’s absolutely delicious on bread, right from the jar, and the perfect addition to your favorite recipe.

I chose to try the Roasted Tahini and Garlic Tahini flavors.

Sesame King also offers flavors such as Light Roast, Honey, Cajun, and Tomato Basil.

Seriously, I wanted to try them all after my experience with the roasted and garlic flavors.

The garlic flavor was perfectly seasoned, not overpowering at all and added the perfect flavor to my garlic hummus, without actually having to add more garlic.

I used the roasted flavor to make my chickpea salad which was absolutely life changing!


These little delicate chickpeas are paired with zesty red onion


and tossed in a creamy, tangy, apple cider vinegar/tahini dressing.

Tahini Chickpea Salad
Recipe type: Salad, Side

The perfect refreshing salad for summer, chickpeas tossed in a creamy tahini dressing and seasoned with Italian spices, salt, and pepper. Gluten-free, vegan.
  • 2 T. Sesame King Tahini (I used the roasted flavor)
  • 2 t. apple cider vinegar
  • warm water, as needed
  • 1 15 oz. can garbanzo beans, drained and rinsed
  • ½ cup red onion, chopped
  • 1 T. Italian seasoning
  • salt and pepper, to taste
  1. In a small mixing bowl, combine the tahini, apple cider vinegar, and just enough water to create a semi-thin dressing. I used about 1-2 teaspoons.
  2. In a large bowl, combine the beans, onion, and seasoning.
  3. Pour the dressing over the bean mixture and toss to coat evenly.
  4. Season with salt and pepper.
  5. Chill in the refrigerator or eat immediately.


Skinny Girl Snack Swap 2.0 Review and Giveaway!

Y’all…I apologize for the lack of posting over the past couple of weeks.

I have been staying in tip top shape running around like a chicken with my head cut off.

My days usually look something like this: eat breakfast, workout, eat lunch, school, internship, eat dinner, sleep.

Coconut Almond Brownies

A rich, melt in your mouth chocolate brownies topped w/ shaved coconut and sliced almonds. Gluten-free, paleo, grain-free. These “paleo”­inspired brownies use coconut flour, which contains significant amounts of fiber and protein, and are sweetened with maple syrup. The frosting is loaded with healthy fats since its base is an unlikely food – avocado! And to top it all off, the nutrient­ packed almond­ coconut topping gives a satisfying texture contrast to the fudginess of the brownies.
  • Brownies
  • ∙ ½ cup less 1 Tbsp coconut flour (50 g)
  • ∙ ½ cup unsweetened cocoa powder
  • ∙ ½ cup unsweetened applesauce
  • ∙ 2 Tbsp coconut oil
  • ∙ ½ tsp salt
  • ∙ ½ tsp baking soda
  • ∙ 3 eggs, at room temperature
  • ∙ ½ cup plus 2 Tbsp maple syrup
  • ∙ 1 tsp coconut extract
  • Frosting
  • ∙ 1 ripe avocado
  • ∙ ½ cup unsweetened cocoa powder
  • ∙ ½ cup pure maple syrup
  • Topping
  • ∙ ½ cup unsweetened coconut flakes
  • ∙ ¼ cup sliced almonds
  • ∙ Pinch of salt
  1. Preheat the oven to 300ºF and grease an 8x8 or 9x9 glass baking dish (8x8 or 9x9).
  2. Mix together all ingredients either by hand, with an electric mixer or with a high­speed
  3. blender.
  4. Pour into the baking dish and bake for 30-­35 minutes, until a toothpick inserted into the
  5. center comes out clean.
  6. Add all of the frosting ingredients to a food processor and pulse to combine. Continue to pulse until the mixture is smooth and fudgy, scraping down the sides as needed.
  7. In a hot, dry skillet, add the ingredients for the topping. Toast until brown and fragrant.
  8. Be careful; coconut burns quickly.
  9. When the brownies have cooled completely, top them with the frosting and then sprinkle with toasted coconut and almonds.
  10. Slice and serve or store in airtight container in refrigerator.
