I can’t even begin to explain my absence last week.
I have been super busy with school and well…life.
Last week was one of those weeks that I was soooooo busy I didn’t even have time to do my hair.
It was a pony tail week.
Not to mention, the fact that I still don’t have transportation after my car was totaled in a wreck a couple of months ago.

Oh, and this all happened while I was helping my best friend shop for a dress to wear to her upcoming baby shower.
So, there we were, sitting in her car, with the air on full blast, waiting in the Texas heat for my dad to drive from work to change the spare.
By the end of that day, I was famished.
I hadn’t had time to have my usual afternoon snack and was contemplating eating my arm off.
I’m the type of person that has to snack.
Plus, because I am all about health, and back in school to become a registered dietician, I am always on the lookout for quick, healthy, snacks that I can eat on the go.
So, basically, my main dilemma when it comes to snacking is time…I’m ALWAYS on the go, often never having a chance to stop what I’m doing for a quick snack.
However, I lovveeeeee to snack, and when I do, I crave both sweet and salty things, it just depends on how I’m feeling that day.
Because I have a sweet tooth, it is often hard to turn down anything with a peanut butter/chocolate combination for me. However, I can usually satisfy most of my cravings with healthier options.
This usually involves a banana w/ smear of peanut butter or cashew butter, or Greek yogurt, with fresh fruit, cinnamon, and a bit of stevia mixed in.
Guess what? My snacking woes just got sooooooo much easier.

I was craving something sweet (as usual), and had some chia seeds on hand (great source of protein and very filling) so I made the Creamy Banana Chia Pudding.

I shared my nacho swap! Avocado toast? Yes, please.
- 1 large, ripe banana
- ½ c. vanilla almond milk (I used unsweetened, vanilla coconut milk)
- 2 T. chia seeds
- dash of pure vanilla extract
- Place banana and milk in a food processor or blender and process until smooth with no chunks.
- Add chia seeds and process a couple of times so that they are evenly distributed.
- Add a dash of vanilla extract and process a couple of more times so that it gets mixed in.
- Pour into a container and chill in the refrigerator at least one hour.
