Skinnygirl Snack Swap Review and Giveaway!

I can’t even begin to explain my absence last week.

I have been super busy with school and well…life.

Last week was one of those weeks that I was soooooo busy I didn’t even have time to do my hair.

It was a pony tail week.


Not to mention, the fact that I still don’t have transportation after my car was totaled in a wreck a couple of months ago.

Let’s just say that I never thought that my 20 year-old cousin would have to drop me off at school…at least I’m obtaining my second degree.

That makes me feel better.

I have been driving my dad’s 1990 suburban around on occasion and the one day I do…it decides to get a flat tire.

I don’t mean like a little flat…I mean a fall off the rim flat.

Oh, and this all happened while I was helping my best friend shop for a dress to wear to her upcoming baby shower.

So, there we were, sitting in her car, with the air on full blast, waiting in the Texas heat for my dad to drive from work to change the spare.

Dear Lord.

By the end of that day, I was famished.

I hadn’t had time to have my usual afternoon snack and was contemplating eating my arm off.

I’m the type of person that has to snack.

Plus, because I am all about health, and back in school to become a registered dietician, I am always on the lookout for quick, healthy, snacks that I can eat on the go.

So, basically, my main dilemma when it comes to snacking is time…I’m ALWAYS on the go, often never having a chance to stop what I’m doing for a quick snack.

However, I lovveeeeee to snack, and when I do, I crave both sweet and salty things, it just depends on how I’m feeling that day.

Because I have a sweet tooth, it is often hard to turn down anything with a peanut butter/chocolate combination for me. However, I can usually satisfy most of my cravings with healthier options.

This usually involves a banana w/ smear of peanut butter or cashew butter, or Greek yogurt, with fresh fruit, cinnamon, and a bit of stevia mixed in.

Guess what? My snacking woes just got sooooooo much easier.

I chose a recipe to try from the snack swap and it was OUT OF THIS WORLD delicious.

I was craving something sweet (as usual), and had some chia seeds on hand (great source of protein and very filling) so I made the Creamy Banana Chia Pudding.


It definitely hit the spot!

Creamy Banana Chia Pudding
Recipe type: Snack

Naturally sweetened bananas, combined with almond milk, and protein-packed chia seeds for a creamy, guilt-less snack.
  • 1 large, ripe banana
  • ½ c. vanilla almond milk (I used unsweetened, vanilla coconut milk)
  • 2 T. chia seeds
  • dash of pure vanilla extract
  1. Place banana and milk in a food processor or blender and process until smooth with no chunks.
  2. Add chia seeds and process a couple of times so that they are evenly distributed.
  3. Add a dash of vanilla extract and process a couple of more times so that it gets mixed in.
  4. Pour into a container and chill in the refrigerator at least one hour.

Ninja Skills

I cannot tolerate procrastination.

Unfortunately, I have some family members who have a gold medal in that sport.

My dad takes the cake on it…sorry Dad.

Let’s just say, I like to get sheeeeet done.

If I get an assignment for school and it’s due 3 months from then, I bang it out that week.

I’m a ninja.

But you probably already knew that.

The same thing goes for my baking/cooking, when I have a recipe on my mind, I jump on it.

Plus, you don’t procrastinate when chocolate chips are involved.


Mini chocolate chips…


that get stuffed into mini cookies.


Because we loooooove mini things.


Plus, we are trying to watch our figure.


Or ya know…maintain our figure.


And mini cookies with mini chocolate chips have negative 143920420 calories.


That is the stuff that dreams are made of 😉

3-ingredient Mini Chocolate Chip Cookies
Recipe type: Cookies

Crispy edges, chewy center, stuffed w/ mini chocolate chips, and made with only 3-ingredients! Gluten-free, paleo, refined sugar-free.
  • 1 c. cashew butter (I made mine homemade using a food processor, process about 2 c. roasted, unsalted cashews in your blender or food processor until a smooth creamy butter forms, about 5 minutes, use your spatula to scrape down the sides if needed, season with salt to your liking)
  • 1 c. coconut sugar
  • 1 large egg
  • 1 c. Enjoy Life mini chocolate chips
  1. Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper.
  2. In a large bowl, combine all of the ingredients, except the chocolate chips, until smooth.
  3. Fold in the chocolate chips.
  4. Use a small cookie scoop to drop the cookie dough onto the baking sheet.
  5. Bake for 10 minutes, or until they have spread just slightly and are lightly golden.
  6. Let cool on the baking sheet.
  7. Devour with a glass of your choice of milk.


Labor-less Day

I know it’s Labor Day and I’m supposed to be talking about some amazing glazed, fall of the bone, succulent pork rib dinner, followed by a homemade peach pie with a scoop of Blue Bell Homemade Vanilla Ice Cream…..buuut, you know I like to break the rules.

Today is all about snacks.

Plus, you will need some good snacks if you are going to be behind a grill all day today.

It’s Labor Day, there is no laboring involved in this snack.

It’s only two ingredients.




and toasted coconut…


all up in your face.


Then I pulverized them into a creamy, slightly, salty and sweet


smash-bang toasted coconut pistachio butter.


Y’all this stuff is ridiculous…nutty, slightly crunchy, with an island vibe to it.


Grab a piece of toast and slather some of this on it…then go have a mimosa for me!

Toasted Coconut Pistachio Butter
Recipe type: Nut Butter, Spread, Snack

Toasted coconut and nutty pistachios combine to form, a creamy, salty/sweet nut butter that is perfect for snacking. Gluten-free, paleo, vegan.
  • 1 c. roasted, unsalted pistachios
  • 2 c. unsweetened coconut flakes, toasted
  • ½ t. fine sea salt
  1. Place the ingredients in a large food processor and blend until a smooth, creamy butter begins to form. This takes about 5 minutes.
  2. Scrape down the sides of the bowl as you go.
