I cannot tolerate procrastination.

Unfortunately, I have some family members who have a gold medal in that sport.

My dad takes the cake on it…sorry Dad.

Let’s just say, I like to get sheeeeet done.

If I get an assignment for school and it’s due 3 months from then, I bang it out that week.

I’m a ninja.

But you probably already knew that.

The same thing goes for my baking/cooking, when I have a recipe on my mind, I jump on it.

Plus, you don’t procrastinate when chocolate chips are involved.


Mini chocolate chips…


that get stuffed into mini cookies.


Because we loooooove mini things.


Plus, we are trying to watch our figure.


Or ya know…maintain our figure.


And mini cookies with mini chocolate chips have negative 143920420 calories.


That is the stuff that dreams are made of 😉

3-ingredient Mini Chocolate Chip Cookies

Crispy edges, chewy center, stuffed w/ mini chocolate chips, and made with only 3-ingredients! Gluten-free, paleo, refined sugar-free.
  • 1 c. cashew butter (I made mine homemade using a food processor, process about 2 c. roasted, unsalted cashews in your blender or food processor until a smooth creamy butter forms, about 5 minutes, use your spatula to scrape down the sides if needed, season with salt to your liking)
  • 1 c. coconut sugar
  • 1 large egg
  • 1 c. Enjoy Life mini chocolate chips
  1. Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper.
  2. In a large bowl, combine all of the ingredients, except the chocolate chips, until smooth.
  3. Fold in the chocolate chips.
  4. Use a small cookie scoop to drop the cookie dough onto the baking sheet.
  5. Bake for 10 minutes, or until they have spread just slightly and are lightly golden.
  6. Let cool on the baking sheet.
  7. Devour with a glass of your choice of milk.
