Summer Sun.


Summer is upon us.

I left work the other day, walked one block in the 90 degree heat, and was dripping in sweat by the time I reached my car.

It doesn’t really help when I have to wear all black to work either.

I mean, c’mon employers…this is texas, we should be able to wear neon in this weather.

Not to mention, I burned my leg sitting on the scorching hot leather seats in my car.

Oh, and of course, just when the heat hits…my air conditioner decides that it is going to take about 30 minutes to click on. dripping sweat bullets is not fun.

Neither is getting stares from some homies on the side of the road just because I have my windows rolled down and am blasting Tim Mcgraw radio.

White girl problems right there.

I love, love, love the summer, but the Texas heat is a different kind of animal.

I want to sit by the pool all day w/ a good stack of trashy magazines, and a big pitcher of ice cold sangria.

I also want all of my snack, desserts, etc., etc. to be summer inspired.

Anything with poppy seeds reminds me of summer.


Oh, and don’t let these muffins full you…no lemons here.


Nope, I went crazy and made these ORANGE poppyseed muffins.


Because I love to step outside of my comfort zone like that.


I’m sure you were shocked!


These muffins are slightly sweet with all the flavor of a zesty orange.


Plus, those poppy seeds make for a great beady texture w/ eat bite.


Oh, and they are made with stevia.


Only because I’m awesome like that.

Orange Poppyseed Muffins
Recipe type: Muffins

Serves: 6
Melt in your mouth muffins chock full of nutty poppy seeds and fresh orange zest. Gluten-free, paleo, nut-free, refined sugar-free.
  • ⅓ c. + 3 T. liquid egg whites
  • ¼ c. granulated stevia
  • ¼ c. full-fat coconut milk
  • ¼ c. extra-virgin olive oil
  • ¼ c. coconut flour
  • ¼ t. salt
  • ¼ t. baking soda
  • zest of 1 small orange, plus more for garnish
  • 1 T. poppyseeds
  • slightly melted coconut butter, optional
  1. Preheat the oven to 350 degrees F. Line a muffin cup pan w/ paper liners.
  2. In a large mixing bowl, combine the egg whites, stevia, coconut milk, and evoo.
  3. Stir in the coconut flour, salt, baking soda, orange zest, and poppy seeds.
  4. Pour the batter into each prepared muffin cup, filling about ¾ full.
  5. Bake for 12-15 minutes, or until a toothpick inserted into each muffin comes out clean.
  6. Serve topped w/ melted coconut butter and a bit of fresh orange zest if desired.


Tuesday Thoughts: Motivation

Happy Tuesday y’all!

Yesterday was the beginning of the Tone It Up Bikini Series Challenge.

Let me tell you…I was stoked.

Let me also say that in no way should you ever give up coffee the day before you start a new fitness routine.

I’m pretty much sure that I ran 3 miles at 5:30 a.m. Monday morning…in my sleep.

Yep, that’s me.

Even though I was exhausted, I was so excited to begin my new fitness challenge.

I just knew that I would feel 100% better after my run.

Oh, and did I ever!


I mean, just look at all that glistening.

I absolutely love to sweat.

You may think I’m nuts, but fitness motivates me to get out of bed every day.

That feel good feeling that I experience after a workout is enough to fuel my entire day.

It’s absolutely glorious.

I love a good challenge, especially one that motivates me to try new things.

Like giving up refined sugars.

I’ve been refined sugar free for about 2 weeks now and I have never felt better.

Once again, I love when I am pushed outside of my comfort zone.

This is a picture of what my summer 2014 will look like.


It’s all about my #createyoursummer plan for the Tone It Up Bikini Series.

This totally holds me accountable and reminds me to have fun and work towards completing everything on this list.

I also created a motivation board filled with quotes and pictures to keep me on my toes…constantly working toward my goals.


My goals for this challenge are to let loose, tone up, have fun, eat a well balanced diet, and listen to my body (which includes rest and workout days).

There is a difference between a lazy day and a recovery day.

505 Southwestern Giveaway!

Ummmmmmm…it’s pretty much been ages since I had a giveaway.

Y’all…you know that I have a sauce/dip/anything that I can have on the side of my meal obsession.

Y’all…it’s that time again.

Secret Recipe Club time.

This month I was absolutely delighted that my secret blogger was Kate, the lovely lady behind Kate’s Kitchen.

Kate is a financial planner who loves to cook. Her husband is also a professional sous chef, so obviously, I am super jealous.

I’m sure they just have amazing food ALL THE TIME!

Kate, can you come help me with my taxes? I will totally bake you a cake and we can eat it over a nice cup of coffee.

I’m pretty sure in all the years that I have been a member of this awesome group of food bloggers, I have yet to make something that isn’t a dessert.

Well, Kate’s broad recipe index opened up my mind to giving something other that cookies, cake, and pie a chance.

Oh, but you know it was something that I absolutely adore.

well, that’s basically my life’s purpose.


This is as creamy as a coleslaw can get.


With greek yogurt & avocado…that’s one creamy smash-bang combo.

All those healthy fats from the avocados and veggies galore!

Guacamole Slaw
Recipe type: Side/ Salad/Appetizer
Cuisine: American/Mexican

A creamy avocado based cabbage slaw with all of the flavors of guacamole. Gluten-free.
  • 1 large ripe avocado, mashed
  • ½ c. non-fat Greek yogurt
  • ½ c. fresh cilantro, chopped
  • 1 small clove of garlic, chopped
  • 1 small yellow onion, chopped
  • 1 small tomato, diced
  • 1 small jalapeno pepper, seeded and diced
  • 1 package of shredded cabbage mix
  • 1 small lime, juiced
  • 1 T. apple cider vinegar
  • 1 t. ground cumin
  • salt and pepper, to taste
  1. In a small mixing bowl, combine the avocado, yogurt, cilantro, garlic, onion, tomato, and jalapeno until smooth.
  2. Place the cabbage mix into a separate mixing bowl.
  3. Pour the lime juice and vinegar over the top.
  4. Add the cumin.
  5. Pour the avocado mixture over the cabbage and toss to combine.
  6. Season w/ salt and pepper, to taste.
  7. Chill in the fridge and serve right before eating.
