I’m kind of upset that Christmas is over.

I even got a little sad when the decorations were taken down this year.

I think it’s because I get to hang out with my family more often.

It’s always amazing.

So, I am going to continue celebrating Christmas here on the blog w/ Christmas themed food.

This will probably be my last pumpkin post for the holiday season.


Let’s talk pumpkin butter.


It’s like all the holiday flavors combined into one silky, smooth, thick, luscious jar of pumpkin jam.


Actually, that’s exactly what it is.


It’s amazing spread on top of crispy toast, my scrambled eggs, or a slice of banana bread.


Butttttttt…what if we put it into the bread?

Pumpkin Butter Bread

Melt in your mouth pumpkin bread spiced w/ ginger, cinnamon, and cloves and made w/ thick, creamy, pumpkin butter jam. Gluten-free, paleo, refined sugar-free, nut-free.
  • ½ c. coconut flour
  • ½ c. granulated stevia
  • ½ t. salt
  • 1 t. baking powder
  • ¼ t. ground cloves
  • ¼ t. ground ginger
  • ¼ t. ground cinnamon
  • 1 large eggs
  • 2 large egg whites
  • ¼ c. extra-virgin olive oil
  • ¾ c. pumpkin butter jam
  • 3 T. light coconut milk
  • pumpkin butter, for serving
  1. Preheat the oven to 350 degrees F. Grease a 9-in. loaf pan, or two mini loaf pans w/ cooking spray.
  2. In a large mixing bowl, combine the coconut flour, salt, baking powder, and spices.
  3. Stir in the eggs, egg whites, evoo, pumpkin butter, and coconut milk until smooth and even.
  4. Evenly distribute the batter between the two mini loaf pans.
  5. Bake for 40-45 minutes, or until lightly golden and a toothpick inserted into the center of each loaf comes out clean.
  6. Let the loaves cool completely.
  7. Slice and serve w/ additional pumpkin butter.
