Protein Police.

I’m addicted to chips.

Kale chips, that is.

I nearly had a heart attack the other day when my local health foods store was out of my fave flavor.

I’m so pathetic I have even gone as far as to order some of my kale chips off Amazon.

I even had Whole Foods special order them from me.

A 12-bag box isn’t even enough.

I’ve also been addicted to nut butters lately…surprise, surprise.

I’m always addicted to them.

Especially peanut butter.

But lately…almond butter too.

Kill me now.

It’s good protein, right?

So, five spoons worth won’t hurt, right?

Let’s make cookies w/ this stuff.

Makes me feel a little better about my addiction.

Because somehow substituting cookies for almond butter makes sense…?!

Oh well.

Coconut Cacao Protein Cookies

Tender and slightly crispy cookies packed w/ coconut, cacao powder, almond butter, and hemp protein for the perfect snack. Paleo, gluten-free, vegan, and refined sugar-free.
Ingredients
  • ½ c. coconut flour
  • 2 T. hemp protein powder
  • 2 T. cacao powder
  • 2 t. baking powder
  • ½ t. ground cinnamon
  • ¼ t. salt
  • 4 packets of granulated stevia (you could also use a couple of drops of liquid stevia or about 2 t. coconut sugar)
  • 2 T. ground flaxseed meal + 4 T. water (mix together let sit for 10 minutes)
  • 2 T. unsweetened, shredded coconut (plus more for rolling)
  • 1 T. pure vanilla extract
  • ¼ c. unsalted, roasted almond butter
  • ¾ c. unsweetened, vanilla almond milk
Instructions
  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the dry ingredients.
  3. Add in the flax mixture, coconut, vanilla, almond butter, and almond milk, stirring until a big round ball of dough forms.
  4. Using your hands, roll the dough into 1-in. round balls, roll each ball into shredded coconut, and place on the prepared baking sheet.
  5. Bake for 10-12 minutes or until slightly golden.
  6. Let cool completely on the baking sheet.

Hippie Daze.

Y’all…I’m pretty sure I just used 1/2 a jar of coconut oil in a cookie recipe.

Better than a stick of butter, right?

Ahhhh…my hands were an oily mess. 🙂

Coconut oil really does wonders.

It makes for the softest skin ever.

Oh, don’t tell me you haven’t rubbed it on your legs after shaving.

This is coming from someone who has to shave her legs practically every day.

I’m a freaking monkey.

I was born w/ a full head of black hair. Gah. Italian genes.

Winter, please come quick so my legs don’t have to see day light…or a razor for that matter.

If I wasn’t such a chicken I’d get them waxed…but I’d rather be a chicken 🙂

Let’s be hippies this week, k.

Let’s walk around with no shoes on, our toes painted neon orange, with wavy locks of hair fastened lightly to our forehead by a thin, bandana headband.

Maybe we should throw up the peace sign too.

Lawd knows we could all use a little peace right now.

Lindsay Lohan seems at peace w/ herself at the moment.

At least that is what she said at her sit down w/ Oprah on Sunday night.

You don’t lie to Oprah.

It’s like lying to your mom.

You just don’t do it.

Anyway, we are total hippies this week.

So let’s make some hippie cookies.

Hippie because they’ve got hemp seeds in em’.

When you are a hippie, you eat, drink, wear and sleep 100% hemp.

So, why not throw them in our cookies.

Let’s put some coconut and lime zest/juice up in there too.

Coconut Lime Hemp Seed Cookies

Crispy coconut cookies chock full of hemp seeds & flavored w/ zesty lime. Gluten-free, vegan, paleo, and refined sugar-free.
Ingredients
  • 1 c. almond flour
  • ¼ c. coconut flour
  • ½ c. unsweetened, shredded coconut
  • ¼ c. + 2 T. hemp seeds (I used Happy Hemp brand)
  • ½ t. baking powder
  • ¼ c. + 2 T. coconut sugar
  • ¼ c. melted coconut oil
  • 1 flax egg (1 T. flaxseed meal + 2 T. water, mixed let sit for 5 minutes)
  • zest of 1 small lime
  • juice of 1 small lime
Instructions
  1. Preheat the oven to 325 degrees F. Line a baking sheet with parchment paper.
  2. Combine all of the ingredients in a large mixing bowl, mixing until a dough forms and the ingredients are evenly distributed.
  3. Drop the dough by round tablespoons onto the baking sheet and, using the palm of your hand, gently press down on the top of each cookie to flatten.
  4. Bake for 20-25 minutes or until slightly golden brown.
  5. Let cool on the baking sheet slightly before transferring to a wire rack to cool completely.

Secret Recipe Club

Y’all…it’s Monday.

We never like Monday.

It’s not our friend.

Monday gives us a big slap in the face and says “oh hi, you had a great weekend filled w/ pool side margaritas and plates upon plates of smoked barbecue ribs now did you…well, that’s over, welcome to the first of 5 days of 6904904853 emails and bosses whose every command is directed at you.” Lucky, lucky you 😉

However, this Monday is special.

It’s an exception in the rule book about Monday.

Today is Secret Recipe Club reveal Monday, which is a Monday that we can all get behind.

My secret recipe this month comes from Veronica (a.k.a. “Vonnie”), the gorgeous (inside and out) mother, wife, and Krispy Kreme lover behind the blog My Catholic Kitchen.

To say I was stoked is an understatement.

I have been following Vonnie’s blog for quite some time now and she is a food genius.

She is also a woman of faith, as am I.

I too am a Catholic gal myself and find Vonnie super creative, with tons of recipes for feast days and

beyond!

What an over acheiver. haha! 😉

Between her Chocolate Espresso Biscotti and her Peanut Butter Fudge you can imagine how difficult it was for me to decide on a recipe.

Because it’s summer.

Because I am crazy about fruit right now.

Like…I LOOOOOVE ALL THE FRUITS.

The lucky winner was Vonnie’s Blueberry Tart.

Vonnie uses puff pastry to make the crust…which is practically genius because it is super quick and efficient and not to mention, absolutely flaky and crisp.

However, you know I just had to make the recipe my own.

It’s all about the coconut flour crust, y’all.

It’s got some shredded coconut up in it too.

Duh.

We know how I feel about coconut.

All day, everyday.

I also had some peaches on hand and though, “why not?”

The more, the merrier, right?

Blueberry Peach Tart:
 Prep time: 
Cook time: 
Total time: 
Serves: 9
A crispy, shortbread-like coconut crust filled w/ fresh sweet blueberries and juicy peaches. Gluten-free, vegan, and paleo!
Ingredients:
  • For the crust:
  • 2 flax eggs (2 T. ground golden flaxseed meal + 6 T. water)
  • 1/2 c. coconut flour, sifted
  • 1/2 c. unsweetened, shredded coconut
  • 1/4 t. salt
  • 1 T. pure maple syrup
  • 1/4 c. of coconut oil, melted
  • For the filling:
  • 1 large peach, pitted and sliced lengthwise into thin slices
  • 1 pint of fresh blueberries
  • 1/2 c. coconut sugar
  • juice of 1 small lemon
  • zest of 1 small lemon
Instructions
  1. For the crust, preheat the oven to 350 degrees F. Grease a tart pan with cooking spray.
  2. Combine the flaxseed meal and water in a small bowl and let sit for 10 minutes.
  3. Add the coconut flour, shredded coconut, and salt to a food processor and process for 1 minute or until well combined.
  4. With the processor running, slowly add the maple syrup and coconut oil until the mixture begins to form into a large ball of dough.
  5. Using your fingers, work the dough around the tart pan so that it fits neatly. Prick the dough with a fork.
  6. Bake for 13-15 minutes and set aside to cool.
  7. In a large mixing bowl, combine all of the filling ingredients.
  8. Pour into the cooled tart shell and bake for 20-25 minutes or until the blueberries have “burst” and the fruit is bubbly.
  9. Let the tart cool completely before slicing and serving.

Nutritional Facts (1/9th of tart): Calories: 171.8g, Total Fat: 10g, Sodium: 93.3mg, Potassium: 94.5mg, Total Carb: 18.8g, Dietary Fiber: 7.1g, Sugars: 8.7g, Protein: 3.1g

Italians are drama.

I’ve been doing Barre 3 online classes to gain strength in my upper body and I loooooove it.

I’ve also been taking tons of pilates reformer classes.

It feels soooooooo great to be flexible and strong again.

I’ve been a pilates addict for quite some time.

Visit my homegirl Cassey for some amazing pilates workouts.

She knows her stuff.

I was at the check-out at the grocery store yesterday and they had a barrel of Reese’s Peanut Butter Cup Pumpkins for $1 each.

Too early for Halloween candy?

Thoughts.

I feel as though it’s a tad bit early and seriously…it kinda ruins my mojo to know that I can have my fave pb pumpkins in August instead of right around Halloween.

I totally bought these shorts at A & F the other day…only they were blue… for $19.99!

I’ve told you I worked there for a summer during high school, right?

Dear Lawd…worst job over.

Of course they coerced me to apply for the job by telling me that I was really pretty.

Those little sales tactics…they USED TO get me every time.

While I will miss short wearing weather…I’m ready for FALL!

Bring on the campfires, hot chocolate, and autumn hues.

The best part about fall is that I don’t have to shave my legs.

They never come out of my yoga pants/jeans…but more so yoga pants.

What can I say? I looooove comfort.

Lastly, when I was in Cali, I became obsessed w/ Alive and Radiant’s Veggie Crunch Teriyaki Greens.

However, when I returned home, I couldn’t find them at my Whole Foods or anywhere…then I learned that they were out of stock on their website as well.

I even called the people to see when they would be back in stock online…not til September!

My life is over.

But wait…thank goodness for Amazon…I have been ordering them by the case through a health foods distributor.

Yea, I’m that desperate. 🙂
