Did I mention how ready for fall I am?

Yesterday morning I ran 3 miles in 90 degree weather…at 6:30 a.m.


I mean, what do I expect?

Yep, I live in Texas alright.

It’s a love/hate relationship.

Like…I pretty much hate the humidity w/ a passion, but wouldn’t trade my cowboy boots or Texas barbecue for anything in the world.

I guess I will take it.

In the meantime, I will day dream about outdoor fire pits blazing in the 40 degree weather and me cuddled up in a lawn chair w/ a huge blanket as I roast some s’mores.

On Sunday, it was my cousin Grace’s (a.k.a. GG), 11th birthday.

She’s growing up so fast it’s scary.

Such a little young lady.

If that makes sense at all.

I can remember that just the other day she was running around barefoot in the front yard w/ her bathing suit on and her hair all a mess…in November.

I also remember that around the same age, I too was becoming a little lady.

At school I had my mini group of 5th grade friends…I wasn’t a mean girl, I knew them though.

Karma got them in the end.

I was a rather shy 5th grader, to my teachers, but the second I got home, I became that loud, crazy, little Italian girl who wanted to tell her parents anything and everything about school and life.

I’m still pretty* chatty.

Fun Fact:

I actually began shaving my legs in the 3rd grade.

Italian girl problems.

I was seriously born with a thick, dark, head of hair.

Nothing’s changed.

Anyway, Sunday I decided to make GG some birthday brownies.

Mainly, because I’m broke and too cheap to afford anything remotely expensive.

It’s all about what comes from the heart, right?


Brownies it was.


Now, you know I went all out.

Enter my beloved peanut butter.


Peanut butter in the brownie batter

and swirled into the actual brownies.


It’s double the peanut butter, people.




It’s pretty freaking genius.


Swirly peanut butter chocolate goodness.


Please tell me that you know my joy that is peanut butter + chocolate.


I’m sure we can all agree that Reese’s PB Cups are only the greatest candy ever made.


I’m pretty sure that if it were my 11th birthday I would want something similar for dessert.


That something similar being something covered in peanut butter and chocolate.


If you haven’t noticed…I haven’t changed.


At least when it comes to peanut butter.


Oh, and more peanut butter.


Oh, I’m 100% content w/ that.

Peanut Butter Swirl Brownies

Rich, cacao brownies swirled w/ creamy peanut butter and sweetened w/ a hint of maple syrup. Flour-less, gluten-free, vegan, and refined sugar-free.
  • 1 c. smooth peanut butter, divided
  • 1 flax egg (1 T. ground flaxseed meal + 2 T. water, mix & let sit 5 minutes)
  • ⅔ c. pure maple syrup
  • ¼ t. salt
  • ½ t. baking soda
  • ¼ c. cocoa powder
  1. Preheat the oven to 350 degrees F. Grease an 8x8 in. square baking pan w/ cooking spray.
  2. In a large mixing bowl, whisk together ½ c. of the peanut butter and the remaining ingredients until smooth.
  3. Pour the batter into the prepared pan.
  4. Put the remaining ½ c. of peanut butter into a microwave safe bowl and heat for 10 seconds or until slightly melted.
  5. Place a spoonful of peanut butter evenly at each corner of the pan (about 4 total).
  6. Take a large butter knife and beginning at 1 corner of the pan, begin to make swirls with the peanut butter, creating a chocolate peanut butter mosaic 🙂
  7. Bake for 30 minutes, or until a toothpick inserted into the center of the brownies comes out clean.
  8. Let cool completely before slicing into even squares.

    These look SO GOOD. I don’t have any peanut butter at the moment (tragic, I know) but I’m definitely going to make these as soon as I re-stock.

    What do you think is the best way to store these? In the fridge or just in a container at room temperature?

    Also, do you think they’d survive being shipped in a package? I have a friend’s birthday coming up so I’m trying to brainstorm what tasty baked goods I can send to her in the mail.

      Melissa! No peanut butter is definitely an emergency 9-1-1 in my house ;). You can keep them at room temp for sure or refrigerate if you want. They do just fine at room temp though. It depends on how you package them. I would individually wrap them in plastic wrap because you never know how the bow will flip and flop and your friend might end up with some crushed brownies. Other than that, it should be just fine 🙂

  2. Would almond butter work instead of peanut butter? I am thinking paleo…

      Tam! I’m sure ab would work perfect! Just make sure you don’t get a “need to stir” version because the consistency will be too drippy 🙂 I thought paleo too before I did the recipe but I just had to have my peanut butter 🙂
