Don’t Holla Back.


For the first time since high school, I walked into a Hollister store yesterday.

What was I thinking?

#1. I never have and never will wear shorts so short that the bottom of my butt cheeks show.

#2. Do normal sized women shop there?…because their sizes make absolutely no sense at all…seriously people, what am I, a Barbie doll?

#3. Oh I’m sorry, this shirt was on the sale rack but somehow is still full price…you must be crazy if you think I’m paying $40 for a white sheer tank top.

#4. Don’t tell me the shirts that I am about to purchase are $12 and then make me stand in a check-out line for 45 minutes only to discover that they are full price. Note to self: make sure the employee that you speak with is a long-time employee, not someone who is making sale prices up on their first day of work.

#5. I was seriously the oldest person in the place…I guess I learned my lesson.

I’ll stick to the Gap and Forever 25 (haha) from now on.

Oh, and I’m pretty sure that my cashier was Justin Bieber’s younger brother, only with blonde hair.


Did I mention how many families were there with their bratty children who had over $200 worth of clothes…which is like 4 items!?


I’m pretty sure this high school girl was complaining to her mother about how it is a disgrace to society that she has to wear a shirt with actual sleeves to school.


Let’s just say that I wanted to shove a cookie into her mouth.


In the nicest way possible of course.


Then I wanted to tell her my little secret: high school is a breeze compared to the rest of the world.


Her biggest problem will be trying to juggle Homecoming court and the 2 English tests she has on Monday.


Let’s just say the adult me was a little peeved.


But….cookies fix everything in my world.


These cookies are super scrumptious, with a nutty almond butter flavor, and a burst of tang from the lemon juice and zest!


It’s definitely a summer cookie.


Because lemon + coconut =summer.


Duh. 🙂

Lemon Almond Coconut Cookies

Soft, melt in your mouth cookies chock full of creamy almond butter, tangy lemon zest, and shaved coconut. Gluten-free, vegan, paleo, and refined sugar-free.
  • 1 c. smooth, all-natural almond butter
  • 1 flax egg (1 T. ground flaxseed meal + 3 T water, mix let sit for 5 minutes)
  • 1 t. pure vanilla extract
  • ⅓ c. coconut sugar
  • 1 t. baking soda
  • ⅓ c. coconut flour
  • 1 t. freshly squeezed lemon juice
  • zest of 1 small lemon
  • unsweetened, coconut flakes, as needed
  1. Preheat the oven to 350 degrees F.
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, combine the almond butter, flax egg, vanilla, coconut sugar, baking soda, and coconut flour until a dough begins to form.
  4. Fold in the lemon juice and lemon zest.
  5. Roll the dough into teaspoon sized balls. Place each ball of dough on the baking sheet and press into circular disks using the palm of your hand.
  6. Top each cookie w/ the coconut flakes , about 1 teaspoon per cookie.
  7. Bake for 9 minutes, or until lightly golden brown.
  8. Let cool for about 3 minutes on the baking sheet, then transfer to a wire rack to cool completely.
