First Friday Link Love…my Interest in Pinterest!

Happy Friday all,
I know that once again I have made you wait an entire week for a post. But, like I said before, busy, busy, busy! I am all moved in to my new apartment, well, I guess you could say partially moved in. You see, I didn’t have alot of items to move, and basically the majority of my items were kitchen related…are you surprised? Needless to say, my parents (whom I am so grateful for) did most of the heavy lifting of the boxes and it took them a total of thirty minutes to move me in to my new abode. Then, I had these awesome guys from this “little” furniture store, I think you might know it…you know, Ikea, deliver my bed and mattress. Whoo-hoo! Thank goodness for my Dad, and his mad “I can put together an iron bed frame in 5.2 seconds using some dental floss and a makeshift wrench” skills, and my mom and her gnarly HGTV design skills, I had a comfortable place to sleep my first night in my new apartment! Now, because it takes me a while to make decisions, I have yet to furnish the rest of my apartment. I am looking for some vintage esque furniture, also I absolutely love this couch from Ikea (add some plush pillows…yes please), it is super comfy! I also need some barstools (I think my mom is giving me hers), but for now I have made myself an awesome makeshift barstool with two of my blue moving containers…hey, don’t judge me…it works! So, that is an update on my life as of late. Anyhoo, I had this idea that would keep my blog entertaining for Friday, since it is one of my favorite days of the week. Throughout the week I am a blog junkie, whether its a food blog, fashion blog, or my new interest Pinterest, you name it, I am stalking it! That gave me an idea to share with you some of my favorite links that I have come across throughout the week! I will call it, Friday Link Love! I will usually have a theme for each Friday, for example, maybe the theme will be Mexican dishes, so I would post links to my favorite Mexican dishes on various blogs that I absolutely love. Other weeks it will be random, for example, maybe a newfound site that I have come across and am addicted to, like my new favorite, Pinterest…if you haven’t discovered this yet…get on it, now! Today is going to be all about my interest in Pinterest, haha! Basically, Pinterest is a virtual pinboard that lets you organize and share all of the beautiful things you find on the web. People use pinboards to plan their weddings, decorate their homes, and organize their favorite recipes. Best of all, you can browse pinboards created by other people. This is an awesome way to discover new things and get inspiration from people who share your interests. Pinterest has so many different categories, for example, you can spend hours looking at clothes under “Apparel”, or gaze at gorgeous landscapes in the “Photography” section. Since stumbling across Pinterest, I have spent the majority of my time in the “Food and Drink” section, where I get inspiration for creating new dishes. I have also spent quite sometime in the “Home+Furniture” section getting ideas on how to make my apartment ultra chic! In my “free” time I have also found myself looking at dresses in the fashion section. Of course, I can only dream of ever being able to afford one! My alter ego is a wealthy socialite who can afford a gorgeous wardrobe. Anyhow, today I wanted to share with you some of my favorites from the site! Here goes nothing!

Well, I hope you all enjoyed my first Friday Link Love! I would suggest that you check out Pinterest a.s.a.p.! Beware, this site can and will distract you, so I don’t recommend surfing Pinterest while at work or while taking care of small children…you could be looking at a slew of kitchen tables and the next thing you know, your kids are playing in traffic…not a good idea! Also, sorry for my lack of recipes this week, I will post some new recipes soon! In the meantime, treat yourself to a fancy dinner, maybe at your favorite restaurant…better yet, hire a personal chef! Live, love, laugh, it’s Friday be merry!

Happy Friday everyone,
I know it has been more than a week since my last post, but I have been extremely busy. Tomorrow is going to be a very eventful day and the start of a fresh new life for Miss Chelsy (that’s me…if you didn’t already know). You see, tomorrow is the beginning of a bright new future as I will be moving back to Austin to my new apartment for my new job! If you didn’t know, I came to Houston over the summer on a brief “hiatus”…well, basically to spend time with family and take it easy. This vacation was a great idea because it really gave me some time to make some very important decisions regarding my future career. After months of job hunting, spending hours doctoring up my resume and sending cover letters to dozens of employers, I finally got hired. I am excited to report that I will be working for Lululemon…I am ecstatic because I will be apart of their new store opening in Austin. So, that is my little bit of exciting news and now, shifting gears, I have been busy packing, which is why I haven’t been posting regularly this week. Anyway, I decided that to get rid of the baking supplies I stocked up on at my parents house, I was going to make some recipes. I really didn’t want to waste any of my flour, sugar, agave, etc. etc., and I know that my parents will never get around to using them. For example, once I left a carton of yogurt in their refrigerator, came back three months later and the same carton was in the exact spot that I had left it. Gross, I know. Anyway, yesterday I got out of my rut and decided to make some scones. Now, these are not the scones that I am particularly used to. The only scones I eat are my grandmother’s homemade buttermilk scones which she usually stuffs with raisins and sprinkles with cinnamon. My scones aren’t breakfast scones (well I guess you could eat them for breakfast seeing as I did this morning), but are more like dessert scones, which I have studded with semi-sweet chocolate chips and for a hint of sweetness, added some coconut! Immediately, what comes to my mind when I think of chocolate + coconut is of course, my second favorite candy in the world (next to Reese’s), Almond Joy! My dad first introduced me to Almond Joys when I was little and I have been hooked ever since. I mean, c’mon chocolate and coconut with a sweet little almond on top…who wouldn’t fall in love with a sweet treat like that? I put mine in the freezer and eat them like ice cream bites…Yum. Yesterday I was craving those little dears when I decided to recreate the flavors in a scone form. So, today I am presenting you with my Almond Joy (ous) Scones! These things are super simple to make, and I am almost positive that everyone usually has chocolate chips and coconut on hand in their pantry (well, at least I do…or I did). I hope ya’ll enjoy my scones, they are so moist and decadent!

Almond Joy(ous) Scones (GF):

2 1/2 c. almond flour
1/2 tsp. sea salt
1/2 tsp. baking soda
1/3 c. grapeseed oil
1/4 c. agave nectar
2 large eggs
1 c. semi-sweet chocolate chips
1 c. sweetened shredded coconut

1. Preheat the oven to 350 F. Spray 2 large baking sheets with non-stick cooking spray.
2. In a large bowl, combine the almond flour, salt, and baking soda.
3. In a medium bowl, whisk together the grapeseed oil, agave nectar, and eggs.
4. Stir the wet ingredients into the almond flour mixture using a spatula until thoroughly combined.
5. Fold in the chocolate chips and coconut.
6. Drop the batter, in scant 1/4 cups 2 inches apart, onto the prepared baking sheets.
7. Bake for 12 to 17 minutes, until golden brown or a toothpick inserted into the center of a scone comes out clean.
8. Let the scones cool for 30 minutes on the baking sheets, then serve.

Makes 16 Scones.
